Saying Goodbye To The Summer Sunshine: Ice Pops

With schools back and the summer drawing to a close, I wanted to make the most of the last few days of summer sun and decided to experiment with some popsicle moulds I have had in the house for years. 

I am a BIG smoothie person.. I love fruit, especially berries and so, I decided to try creating these yummy popsicles with my very simple smoothie recipe. 

These pops are incredibly juicy and refreshing, as well as being pretty healthy too!

For these particular pops, I used:

Two large handfuls of frozen raspberries
Two large handfuls of fresh (or frozen) blueberries
One raspberry yoghurt
6-8 grapes
A dash of orange juice

Simply blend all of the above ingredients together so that everything turns to liquid. Add the orange juice last as it acts only to thin down the mixture slightly if needed.

Remember, the yoghurt can be swapped out for a banana if you're looking for a dairy free pop. 

Pour your juicy mixture into ice pop moulds and leave to set in the freezer overnight. You will be left with beautiful, tasty summer ice pops - perfect for these last summer days!
